Caakiri

This desert taken from Central Africa is very similar to rice pudding that we have here in the UK - just a little bit more sour. Helen hates rice pudding! She also hates vanilla, so I replaced the vanilla with Orange extract to try and make it a little more appealing to her.

 
This is such a simple recipe and could be used as a base for other recipes - I'd really like to a verison of this with two or three bars of dark chocalate mixed into it.
 
Ingredients  (makes quite a bit!)
 
2 Cups of Cous Cous
50g Butter
200ml water
500ml Plain Yogurt
200 ml Evaporated Milk
200 ml Sour Cream
100g Sugar
1/2 tsp Orange Extract
100g Raisans
2 tsp ground nutmeg
Mint leaves for garnish
 
Method
 
1. Boil the water in a large pan and add the cous cous and butter. Stir together until the water is firmly mixed in. Remove from heat, cover  and leave to stand for 10 minutes.
 
2. In a seperate bowel mix togther he yogurt, milk, sour cream, sugar, orange extract and raisans.
 
3. Stir the yogurt mixture into the cous cous ensuring that it is all mixed together.
 
4. Serve warm or cold in small dessert bowels, optionally sprinkled with nutmeg and mint.
